Once upon a time gas cooktops has standing pilots- a small burning flame that never went out much like Johnny Cash's love for June Carter. I'm sure you can imagine all the ways that this is not ideal. Now modern gas burners ignite when they are needed by an electric spark from an electrode and then they go out until it's time to cook again. Much more efficient and safe.
